Does anybody have a recipe for the hot dressing commonly used in
restaurants for spinach salad? It contains crumbled bacon and has the
pungent odor of warm vinegar.

You're confusing the dressing with salad a little bit. The crumbled bits
of bacon are a usual ingredient of spinach salads (common spinach salad ==
spinach, crumbled hard-cooked egg, & crumbled bacon; crumbled walnuts are a
nice addition, or a substitute for the bacon, for those of us who keep kosher
and/or are vegetarians). The dressing usually used on spinach salads is a basic
vinaigrette dressing. Any good cookbook should have a recipe for vinaigrette,
especially a cookbook with a French slant to it. I would suggest The Joy of
Cooking as the first place to look.
