[net.cooks] hot dressing for spinach salad

This is more or less the recipe that my mother taught me
for hot dressing to put on leaf lettuce. I use it once in the
spring to get started and then go into the "some of this, and
it needs a little more of that" mode. Obviously, it has everything
that a modern nutritionist says you shouldn't do--but...
Recipe:
4 slices of bacon
1/4 cup vinegar (I use cider v., white is ok)
1 tsp sugar
1/2 tsp salt
pepper

Fry bacon until crisp, remove from pan. Dump vinegar and dry
ingredients into drippings and heat to boiling. Dump over
leaf lettuce and onion salad, garnish with the crumbled bacon.
I sometimes toss in some scallion tops when the bacon is
almost crisp. This ought to work also for spinach.
