Many of my friends don't like tofu because their first experience with it involved old, rotting tofu, which shouldn't have been sold in that state. So, here are my tips on buying tofu: -If you live near an oriental community, you can often get freshly made tofu. This is the best. -If you buy it at a grocery store: -Look at the date. I do not buy tofu unless the date is at least one week in the future. -Look at the package. Is it about to burst? That probably means something is growing inside that shouldn't be. Don't buy it. -Turn the package upsidedown, then right-side-up. Is the tofu disintigrating? If it is, it is getting too old, don't buy it. -The tofu is sitting in water inthe package. As you gently shake the package, watch the water...is it acting like water, or is it acting like a thick slime? If it is acting slimey, the tofu is probably getting bad. -If you plan to buy tofu often, ask the store what day the tofu gets delivered. Fresh tofu should not taste sour. Hope this helps.
