How about some good homemade liqueur and cordial recipes. I'll start things off with my three favorites: Kahlua 1-1/2 C very strong real coffee (the better the coffee, the better the kahlua) 3/4C sugar 1 C brandy (or to taste, I like more) 1 t vanilla extract Combine the coffee and sugar in a sauce pan. Bring to a boil and simmer until the volume is halved (about 1 hr at sea level, in Denver it takes 30 - 45 minutes). COOL this syrup. Add the brandy and vanilla extract. It improves with age like all liqueurs. Irish Cream Liquor 1 can (14 oz) SWEETENED condensed milk 1-3/4 C Irish whiskey (I've substituted Canadian Club with success even though the flavor is quite different) 4 eggs (fresh uncracked grade A eggs are imperative since this won't be cooked) 1 C cream (the calorie conscious can fool yourselves with half-half or milk) 2 T chocolate syrup 1 T powdered coffee 1 t vanilla extract 1/2 t almond extract Combine all ingredients in a blender until smooth. Store in the refrigerator for up to one month. "Stewed" Apricots (or peaches) 1 lb. DRIED apricots or peaches 1 lb. plain, clear rock candy 1 quart vodka Combine all ingredients in a jar with a good lid. Cover and store at room temperature for three weeks to allow the flavor to develop. After the first day remove the strings from the rock candy. Enjoy cautiously! Betsy Cvetic ihnp4!drux3!eac
