[net.cooks] Liqueurs and Cordials

How about some good homemade liqueur and cordial recipes.  I'll start things
off with my three favorites:

Kahlua

1-1/2 C very strong real coffee (the better the coffee, the better the kahlua)
3/4C sugar
1 C brandy (or to taste, I like more)
1 t vanilla extract

Combine the coffee and sugar in a sauce pan.  Bring to a boil and simmer
until the volume is halved (about 1 hr at sea level, in Denver it takes 
30 - 45 minutes).  COOL this syrup.  Add the brandy and vanilla extract.
It improves with age like all liqueurs.


Irish Cream Liquor

1 can (14 oz) SWEETENED condensed milk
1-3/4 C Irish whiskey (I've substituted Canadian Club with success even though
        the flavor is quite different)
4 eggs (fresh uncracked grade A eggs are imperative since this won't be cooked)
1 C cream (the calorie conscious can fool yourselves with half-half or milk)
2 T chocolate syrup
1 T powdered coffee
1 t vanilla extract
1/2 t almond extract

Combine all ingredients in a blender until smooth.  Store in the refrigerator
for up to one month.

"Stewed" Apricots (or peaches)

1 lb. DRIED apricots or peaches
1 lb. plain, clear rock candy
1 quart vodka

Combine all ingredients in a jar with a good lid.  Cover and store at room
temperature for three weeks to allow the flavor to develop.  After the
first day remove the strings from the rock candy.  Enjoy cautiously!
