[net.cooks] Ma Po Bean Cake

You'll need a wok to make this yummy hot and spicy bean cake.
Rice is the perfect accompaniment; start it early.

	1 Tbsp.  hot bean sauce (or less)
	1/2 lb.  ground pork
	1 tsp.	 soy sauce
	1 1/2 tsp. sugar
	4 bean curds (about 8 oz.)
	2 Tbsp.  peanut oil
	2 Tbsp.  minced ginger
	1 Tbsp.  minced garlic (or less)
	1/2 tsp. salt
	1/2 cup  chicken stock or water
	1 tsp.	 toasted & ground peppercorns or black pepper
		 (or less)
	1/2 cup  sliced scallions
	2 tsp.	 cornstach dissolved into 1 Tbsp. water
	1 Tbsp.  sesame oil

preparation takes about 10 to minutes (all told)

1)  mash together bean sauce, pork, soy sauce and sugar
2)  separately mash bean curd
3)  heat wok
4)  add peanut oil, ginger, garlic, salt (stir for 30 seconds)
5)  add pork and brown (couple of minutes)
6)  drain fat from wok
7)  add chicken stock, simmer in wok for 3 minutes
8)  add bean curd, cook for 2 minutes
9)  add pepper, scallions, cornstarch and water--30 seconds
10)  remove from heat, stir in sesame oil
11)  garnish with extra scallions

This makes a hot and spicy dish.  Lessen the amounts of
hot bean sauce and ground pepper.  Enjoy.
