Below is a recipe for a pie which has brought rave reviews from
both myself and all others I have introduced it to; beware!
While I like it tart, some may prefer it sweeter. For those people,
feel free to increase the amount of sugar/water mix (or cornsyrup). In
the recipe posted in the Harrowsmith Cookbook, the amount of sweetener was
~ 3* that posted below.
Cranberry/Walnut Pie
Pastry for 9" pie shell
3 1/2 C. fresh cranberries
1/2 C. seedless raisins
2/3 C. (brown) sugar mixed w. ~1/3 C. water (to syrup consistency)
-may substitute 2/3 C. cornsyrup
2 T. flour
1 t. grated orange rind
1/4 t. salt
1 T. soft butter (or margarine for vegans)
3/4 C chopped walnuts
orange slices & whole cranberries for garnish (opt.)
Grind cranberries/raisins together
Add sweetener, flour, orange rind, salt, and butter (or margarine)
Mix well
Stir in walnuts
Place in pie shell
Bake at 375 degrees F., 40-45 min.
Cool
Garnish with orange slices & whole cranberries (opt.)
Serve with ice cream (opt.)
* I have found that adding mixing all the ingredients together to mix
works just as well and saves time.
Very easy, and VERY good.
