I just thought I'd add my two cents worth regarding clarified butter. DON'T
discard the scum from the top. It is really good on vegetables, or you
could stir it into mashed potatoes.

When you clarify butter, if it is salted, the salt will be in the `scum'.
I made the mistake of using this on toast one time and had to throw it
away. Even lightly salted butter scum has a lot of salt in it after you
have clarified 8 tablespoons.
