Will Martin at brl-vgr asked about local specialty foods.  The first
things that came to my mind were "speedies".  Speedies seem to be local
to the Binghamton NY area.  They are skewered and grilled over an
open fire, usually made from lamb, venison, buffalo, rabbit, pork, beef
(choose any 4, but be sure to include at least some game meat) that has
been marinated for at least 24 hours in "speedie sauce".  This sauce
can be purchased in the local grocery stores there; it resembles a
rich, spicy Italian salad dressing.   With the proper marinade, they
are delicious.

Sort of on the same topic, I think of foods that are called different
things in different parts of the country.   Here in Denver, go to most
Italian restaurants and order a "cannoli" and what you get is a hot piece of
folded pizza dough, stuffed with pork sausage, tomato sauce, cheese, and
spices.  Where I grew up in New Jersey, such a thing is called a "calzone".
A "cannoli" on the east coast is a dessert item, stuffed with light sweet 
cheeses or whipped cream.

Similarly, in Milwaukee, where I spent my young years, a water fountain
was called a "bubbler".  Nowhere else in my travels have I heard this word.
I got some very bizarre looks when my family first moved to New Jersey
and I asked strangers in stores where the "bubbler" was.

Dave Bauer mentioned that, growing up in Milwaukee, he used the term
"bubbler" for what most (US)Americans call a "water fountain," and did not
know of any other area where "bubbler" is used.  I grew up in Boston using
the same term, and was amazed when nobody in Michigan (where I went to grad
school) knew what that meant.  Thereafter I just assumed that only
Bostonians say "bubbler".  I guess Milwaukee is another pocket of
civilisation in this wasteland.
