Well, I've been on the Pritikin Diet for a month, and have lost
twelve pounds.  (Eighteen more to go.)  I have come up with some
good recipes which I thought I would share.

	GARLIC DIP

This dip is great for vegetable sticks and crackers.  It
also makes a wonderful spread for sandwiches.

	3 cloves of garlic (or more, to taste)
	6-8 ounces low fat (1 percent milkfat) cottage cheese

	Peel garlic and cut into quarters.  Drop into food
processor fitted with steel blade.  Whirl until finely chopped.
Add cottage cheese, and keep blending until mixture is creamy and
smooth.

	HUMMUS

	1 cup dried chickpeas (or 2 cups canned)
	1/2 cup orange juice
	1/4 cup low-salt soy sauce
	1/4 teaspoon cumin
	1/4 teaspoon coriander
	1/4 teaspoon dry mustard
	1/4 teaspoon powdered ginger
	3 cloves garlic, minced

        Soak and cook dry chickpeas, if used.  (I prefer using
the dry peas, because they retain some texture and can be cooked
without salt.) Combine all ingredients in a blender or food
processor, and blend until smooth.  Serve with vegetable sticks
or pita bread cut into wedges. 

	BABA GANOOSH

	Follow recipe for hummus, except substitute 1 large
eggplant, cooked and cubed, for the chickpeas.

	BAKED EGGPLANT

	1 large eggplant
	1-1/2 cups bread crumbs (try oil-free sourdough-- yum)
	1-1/2 teaspoons garlic powder
	1 teaspoon minced onion
	1/2 teaspoon dried basil
	1/2 teaspoon dried oregano
	1/2 teaspoon powdered savory
	1-1/2 teaspoons grated cheese
	1/2 cup skim milk (preferably evaporated skim milk)
	2 large tomatoes, thinly sliced
	1 quart spaghetti sauce

	Slice eggplant 1/4-inch thick.
        Make a breading by combining next seven ingredients
(bread crumbs, garlic powder, minced onion, basil, oregano,
savory, cheese) in a blender. 
	Dip slices in skim milk, then in breading mixture.  Press
firmly to adhere.
	Put slices in single layer on foil-lined cookie sheet.
Bake at 400 degrees F. for 45 minutes.
	Remove slices from oven; lower heat to 375 degrees.
	Put some sauce on the bottom of a 2-quart baking dish.
	Layer slices this way: eggplant, sauce, eggplant,
tomatoes, eggplant, sauce, eggplant.
	Sprinkle with any leftover crumbs (and some more grated
cheese, if desired).  Bake for 25 minutes, or until heated
through.
	Serve 'as is' or over pasta.

	A final addendum:

A wonderful new book that will definitely help anyone interested
in the Pritikin Diet is "The Pritikin Promise:  28 Days to Better
Health and Well-Being". It is a restatement of the Pritikin plan,
but this time, 28 complete menus are included, plus lots of
recipes for breakfast fare, luncheon ideas, beverages and snacks.
A real life-saver if you don't have the time (or inclination) to
try to create something good and 'legal'.  I'll be more than
happy to send out some of my other favorites upon request.
