[net.cooks] Violet vinegar

amigo@iwsl7.UUCP (John Arnold Aaron Hobson) (03/22/84)

This is an interesting vinegar coloured by and slightly flavoured by violets.

4 cups violet blossoms (use only those which have no possibility of chemical
	treatment, probably only homegrown)
1 quart distilled white vinegar

Pack a 1 1/2 quart jar with violets, pour on vinegar. Let jar sit in a sunny
window 4 or 5 days until violets bleach out. Strain. This looks very nice on light salad or to thin mayonnaise for salads. Caution, do not use olive oil
with it, since the flavours do not work well together and the colour becomes
muddy.
