This is an interesting vinegar coloured by and slightly flavoured by violets. 4 cups violet blossoms (use only those which have no possibility of chemical treatment, probably only homegrown) 1 quart distilled white vinegar Pack a 1 1/2 quart jar with violets, pour on vinegar. Let jar sit in a sunny window 4 or 5 days until violets bleach out. Strain. This looks very nice on light salad or to thin mayonnaise for salads.
