For all of you who have tasted the wonder known as Juniors cheesecake
(and those who have yet to try it) I would like to submit as a public
service this recipe for Juniors cheesecake that appeared in the
Daily News Food section some years back. Its the real McCoy.

Junior's Cheesecake:

Preheat oven to 450 degrees.

Butter an 8 inch springform pan, then make crust:
mix together: 1 1/2 cops of flour
	      1/2 cup sugar
              2 teaspoons baking pwder

then ,cut in pieces,add: 1 stick sweet butter and (slightly beaten) 1 egg
Mush it all together with your hands to form a smooth ball.

To make a litle easier,dust hands with flour, then press small lumps of dough
over bottom of pan, then up the sides. Be sure it meets at the bottom edge
and is as smooth as you can get it. Put in the fridge while making the filling

30 oz. of cream cheese(must be at room temp-very soft!)
7/8 cup sugar
2 Tablespoons cornstarch
1 extra large egg
1 teaspoon vanilla
1/2 cup heavy cream

In a large mixing bowl cream the cheese till fluffy,scrape a few times( it 
tends to lump around the beaters. While this is getting beaten, combine the
sugar with the cornstarch and add it gradually to the cheese, then beat in the
egg, the vanilla and last, the heavy cream. Pour into the prepared crust and
bake for 30 minutes. Cool on a rack then remove sides of pan.

Cheesecake is better after its been in the fridge for several hours. When cold
you can top it with washed drained and very dry strawberries which are
glazed with some melted jelly. Currant jelly is the best.

For a truly authentic Juniors cheesecake you must have "knubbles" on top of 
the finished cake. Here is my recipe for knubbles.

Sweet butter
Almond paste
Flour

Combine the ingredients depending on how many knubbles you want to make.
I use about 1/4 stick of butter,4oz of almond paste and just enough flour
to make the mixture unsticky. This should be done in a bowl. To form knubbles
you must pick at the mixture with your fingers as if you were tossing a 
salad. When done correctly you will get smaller and smaller knubbles. When
knubbles are the size of BBs they're ready. Spread knubbles on an aluminum
foil covered cookie sheet and bake in oven or toaster oven checking them
until they look golden. Remove from heat and cool. 

Sprinkle knubbles over the finished cake. Enjoy. You couldn't get a better
cheesecake unless you drove to Juniors on Flatbush Avenue in Brooklyn.
