One book that I bought about eight or nine years ago, and still provides a great deal of inspiration and amusement is "Sandwich Exotica, The Sandwitch Manual for Connoisseurs" by Louis P. DeGouy (published in 1975 by Running Press). This book was originally published in 1939 with the title: "Sandwich Manual for Professionals". The book contains just under 600 recipes for sandwiches and sandwich garnishes, an alphabetical index to all of the recipes, and a cost table (circa 1939) for calculating the costs and profits to guide a restauranteur. Some examples of the recipes contained within this book are: Chicken-Celery-Lettuce AND Bacon-Tomato on Rye, Mushroom-Fried Onion AND Tomato-Bacon-Lettuce on Toasted Rye, Hamburger-Bean Salad AND Orange Marmalade-Nut Cress on Orange Date Bread, and Egg Salad-Watercress AND Pickle Relish-Asparagus Tips on Rye. As you may have discerned, this is a great book for stretching your imagination to help avoid boring lunches (or dinners). P. King (...!hao!denelcor!pking)
