Most of my friends enjoy eating "Moinmoin" which is an African dish. I am posting the recipe on the net for those that might like to try it. Hah! it is a delicious food, try it. ================================================================ Moinmoin 1 lb black eye peas 6 hard boiled eggs, chopped 1 red pepper, coarsely chopped 1-8 oz can tomatoes 1-6oz can tomato paste 1 large onion, coarsely chopped 1/4 cup oil 6 oz corned beef, chopped 5 cups water Soak black eye peas for several hours. Use blender on low speed to loosen black eyes. Remove black eyes by hand. Preheat oven to 350F. Liquefy peas, onion, red pepper, and tomatoes with water in blender. Pour into large bowl, mix in tomato paste, eggs, oil, and corned beef. Add salt and pepper to taste, pour into baking dish and cover with aluminum foil. Cook at 350F till firm (about 45 mins). houxz!ho95b!aaa
