This is a dish my mother used to make.  We always thought it quite a
treat.  I was struck by the similarity to Piroski and Pasties (a Cornish
dish consisting of a stew-like filling in a pie crust shaped like the
mini pies you get from vending machines...the best ones can be found at
any of several bakeries in Butte, Montana.)  I think Beerocks are of
German or Dutch origin. 

It's interesting how similar dishes appear spontaneously(?) in different
cuisines...and how very different they turn out: Piroski, Beerocks,
Burritos, Pasties, Lumpias(Philipino?), Char-sil-Bow (chinese dumplings
filled with BBQ pork)...

The recipe included for the dough isn't magic; any bread dough will do.
Mom actually used (dare I say it?) Velveeta as the 'cheese'.  We liked it,
what did we know?  Hope you try beerocks...I'm pretty sure you'll like them.




		Beerocks
						

		Dough		

Sprinkle yeast over water in large bowl.	1 & 1/2 cups warm water
						2 pkgs yeast
Stir in sugar and salt 'till disolved.		1/2 cup sugar
Let mixture stand a few minutes until 		1 Tblsp	salt
bubbly.   					2 eggs
						1/4 lb softened butter
Add eggs, butter, mashed potatoes,		1/2 cup mashed potatoes
and 3 cups of the flour.  Beat at high 		6 to 7 cups flour
speed just until smooth.  

Beat in two more cups of flour.  

Add 1 & 1/2 to 2 cups more flour aand
knead 10-15 minutes.

Turn into a greased bowl; cover and let
rise until doubled in size.

Punch down to original size.  Dough is 
now ready to use.


		Filling		

Brown ground beef in a *large* skillet.		2 lbs ground beef
						1 head cabbage
Add cabbage (shredded), onion (diced), 		1 onion
allspice, and salt and pepper to taste.		1/2 tsp allspice

Simmer until cabbage thoroughly cooked.
Filling is now ready to use.


		Assembly

Brush bottom of large rectangular baking	Melted butter
pan with melted butter.				12-18 slices of cheese
						(cheddar; Jarlsberg;
Roll out about a third of the dough until	preferrably a sharp
it is .25 inch thick.  Cut into squares.	cheese.)
(Makes 12-18 Beerocks depending on size)

Place a slice of cheese into center of each 
square.  Spoon in appropriate amount of filling.

Fold corners into center; Pinch to seal.

Place beerock into pan, seams down.  Brush with butter.

When pan is filled/supplies consumed place
pan in warm place to rise (about 25 minutes).

Bake at 400 F 20 to 25 minutes.  Serve with
a salad and mugs of cold beer.
