I think there is a recipe for Carbanara (sp?) in the Moosewood or Vegetarian
Epicure cookbooks.

You asked for it...
This recipe is based on one from Ada Boni's Italian Cookbook,
modded by experience:

Spaghetti Carbonara

Ingredients:
Enough linguine/spaghetti for 2 people
Enough bacon for 2 people
Enough grated Romano/Parmesan to satisfy your taste for the stuff
3 eggs, beaten
1/4 cup white wine
1 tsp. pepper

Boil pasta until tender.  Meanwhile, fry bacon until crisp.  Drain
and reserve 2 tablespoons bacon fat. 

Mix together cheese, eggs and wine.

When pasta is done, drain and return to hot pot.  Immediately add
eggs/wine/cheese to hot pasta;  add very hot bacon fat and pepper.
Toss.  The heat of the pasta should cook the eggs.

Transfer to hot platter.  Serve immediately or you will end up
with one very large solid noodle.  Garnish with bacon and parsley.
Go on diet the next day.

Carbonara........I wish I had time to go home and make some right
now!!!  I've made it several times using a different recipe each
time.  I'll try to organize some thoughts on the subject and post
them ASAP.  In the mean time, I wanted to let all South Bay folks
in on a not so well kept secret - Fish Again and Pasta Too (Steamers)
in Old Town Los Gatos has the most wonderful carbonara you could
ever hope to find!!!!  They even give you the choice of egg or
spinich pasta (the spinich is wonderful).  They don't take
reservations, but if you call before you leave home (they let
you put your name on the waiting list by phone) you'll only
have to wait 15-30 minutes instead of the standard 60-90 minutes.
Their fish is not bad either, and they're adding a few nice
red wines to an already reasonable wine list.  I have only one
request.  Try not to go on a night that I'm going to be there,
the wait is already long enough!
