I am looking for a good potato salad recipe, and any other cold summertime meal or salad to make for those days when it's too hot to eat anything warm (I assume those days will make it here at some point in the next couple of months, although is sure no sign of it yet). [] Being a great fan of cool potato salad, this is what I do. In the morning, before it gets hot, I wash, peel, and cut up three or four medium spuds. Put em on the stove (in water with a couple of shakes of salt) to boil till they are JUST cooked. That is, not quite soft. While they are doing their thing, I take a couple of slices from a juicy bermuda onion and dice them. I then hard boil maybe three eggs. When they are done, I slice and chop em all up. When the spuds are ready, I drain and rinse them in cold water. Now I throw everything in a large bowl and add enough mayonaise to coat everything when stirred. The bowl goes into the refrig to await cooling and lunch or supper. Then I clean up the mess 'cause the wife will holler if I don't. By the time the salad is cool and ready to eat, the onions have had their chance to spread their flavor. Yuuum. T. C. Wheeler

Potato salad is very simpleand refreshing in the summer. You need some cold boiled potatos - best if they are "new", and certainly not overcooked, otherwise they simply break up. A small onion, finely chopped. A couple of tasty (tangy) eating apples Mayonnaise, preferably home made because a) it tastes better, and b) it tends to be a little runnier (at least mine does!) The method: Dice potatoes into 1/2" cubes and dice the apples a little smaller. Mix the onions, potato and apple together in a bowl with enough mayonaise to coat everything and make it stick together in the time honored fashion. Thats about it. Hints: 1. it helps to chill the ingredients first because the apples go brownish if left standing. This way you can make it a few minutes before serving. 2. smear a cut clove of garlic around the bowl to give it that extra sparkle of flavour. 3. garnish with fresh parsley or chives. 4. save some for me! I've never written down my "recipe" for potato salad; but it always gets complements. Very roughly, it contains New potatoes, boiled until just done; then cubed cooked eggs; diced green onion; diced green pepper; diced celery; sliced thin mayonnaise dry mustard salt and pepper Mix together the potatoes, eggs, green onion, green pepper, and celery. Stir a little bit of dry mustard into the mayonnaise. Add enough mayonnaise to the potato mixture until it holds together. Add salt and pepper to taste. Nutrition Hint: don't peel the potatoes. They have more nutrition when you leave the skins on. If you want it look pretty when you serve it, serve it in a lettuce lined bowl. Sprinkle the top of the salad with paprika and place rings of green pepper and round slices of egg on top. ------- Or how about Tuna Stuffed Tomatoes? Simply make a batch of your favorite tuna salad. Then take one large tomato per serving. Cut the top off each tomato, and scoop out the pulp (save the pulp for some other recipe). Then fill each tomato with the tuna salad.
