The following recipe is one that I came up with on one of those cold
winter nights Chicago is famous for.  For lack of a better name, I
called the dish "Coq Au Vin with raisins".  I know it isn't a classic
Coq Au Vin, but try it, I think you'll like it!  (Yeah...you read that
right...I said "with raisins".  It really adds a nice flavor!)

Coq au Vin with Raisins


Ingredients


1 - medium fryer, cut up
1 teaspoon chopped fresh ginger root
1 clove garlic, chopped
2 tablespoons peanut oil
1 cup chicken broth
1 cup white wine, preferrably Rhiesling
1 teaspoon chopped parsley
1/2 teaspoon chopped basil
1/2 teaspoon chopped marjoram
salt and pepper
1 bay leaf
6-8 meduum carrots, cut in 1-1/2 to 2 inch chunks
1/2 cup raisins

1/4 stick butter
2 tablespoons flour

Chicken;
Heat oil in dutch oven or deep skillet.  Add ginger
root and garlic and saute about one minute.  add
chicken and brown evenly on all sides.  Add chicken broth, wine, carrots, 
raisins and seasonings.  Bring liquid to a boil.  Reduce heat and simmer
for about one hour. (Or until chicken is tender)

Roux;
Melt butter in saute pan.  Add flour and stir until loose
paste is formed.  The butter should coat each piece of
flour.

Sauce;
Remove chicken and carrots from dutch oven and place on
heated platter.  Add Roux to cooking liquid and stir over low heat 
until thick and smooth.  Spoon sauce over chicken and serve
the rest on the side.

This recipe is great served with mushroom rice pilaf (see the next
article) and homemade bread or rolls to soak up the sauce.  A note
about the wine:  Please don't use cooking wine!  Cooking wine is wine
that is so bad they couldn't sell it.  So they salt it down and call it
cooking wine!  Spend a little extra on a nice bottle of Johannesburg
Rheisling (I prefer Rheisling for this dish because it's slightly sweet
flavor enhances the flavor or the raisins).  When you find the right
wine, buy an extra bottle to serve with dinner!
