[net.cooks] Mushroom Rice Pilaf

The following recipe is a nice side dish for almost anything.  It
was developed as a companion to my Coq Au Vin with raisins (see an
earlier article).

Mushroom Rice Pilaf

Ingredients;

1/2 lb. mushrooms, sliced
One medium yellow onion, chopped
2 T peanut oil
2 T butter
2 c quick cooking rice
1 1/2 c water
2 chicken boullion cubes, cruched (or the equiv. boullion granules)
2 bay leaves

Saute the mushrooms and onions in the peanut oil and butter (mixing the
butter with peanut oil retains the nice flavor of butter, but raises
the burning point so things will saute quicker) until the onions are
golden brown.  Add the rice, water, boullion and bay leaves (crushed).
Bring it all to a boil, lower the heat, and simmer for 10 to 15 minutes
(or until the liquid is absorbed and the rice is done).
