This is in response to a request for the Korean recipe Bibim Bab that came over the net recently. My officemate, who is Korean, supplied this recipe. She also searched in her mind for the dish that someone else asked about (canned seaweed and fish), but had never heard of it. I can't supply any comments or hints on the recipe, since I'm a vegetarian and have never tried this. (Note: this is formatted to be printed out, so strip these lines off up through the dashed line.) Heather Emanuel {allegra, decvax!brunix, ccieng5, linus} rayssd!hxe ----------------------------------------------------------------- BIBIM BAB (MIXED RICE WITH SOUP) _M_I_X_E_D__R_I_C_E You will need: beef soy sauce green onions garlic black pepper sesame seeds sesame oil cucumbers salt MSG (optional) bracken fronds (or eggplant, see footnote) sugar bean sprouts eggs rice gochujan paste cayenne pepper _I_n_g_r_e_d_i_e_n_t_s _f_o_r _M_i_x_e_d _R_i_c_e 1/2 lb beef, thinly sliced _M_i_x_t_u_r_e _A: 2 tbsp soy sauce 2 tbsp minced green onion 1 tsp minced garlic dash of pepper 1 tsp toasted and ground sesame seeds 1 tbsp sesame oil 3 cucumbers, sliced, sprinkled with 1-1/3 tsp salt and the liquid squeezed out _M_i_x_t_u_r_e _B: 1 tbsp sesame oil 1 tbsp minced green onion 1/4 tsp MSG (optional) 1-1/2 tsp toasted and ground sesame seeds 1/2 lb bracken fronds* cut into 2-inch lengths 1-1/2 tbsp sesame oil _M_i_x_t_u_r_e _C: 1 tsp minced garlic 1 tbsp minced green onion 1-1/2 tbsp soy sauce 1 tsp sugar dash of MSG (optional) 1-1/2 tsp toasted and ground sesame seeds 2/3 lb bean sprouts - remove root, cook with 1-1/3 tsp salt for 15 minutes, drain ________ * If bracken fronds are unavailable, substitute 1/2 lb eggplant, sliced crosswise and then cut into thin strips. Parboil, drain and squeeze out liquid. -1- BIBIM BAB (MIXED RICE WITH SOUP) _M_i_x_t_u_r_e _D: 1 tbsp minced green onion 1 tbsp toasted and ground sesame seeds 1-1/2 tbsp sesame oil dash of MSG (optional) 2 eggs, lightly beaten with a pinch of salt 4 cups cooked rice Gochujan paste (available in oriental groceries, also called "Korean Soybean Paste") _P_r_e_p_a_r_a_t_i_o_n _o_f _M_i_x_e_d _R_i_c_e Mix meat well with Mixture A and fry with sesame oil over high heat; set aside. Saute cucumbers lightly and add Mixture B. Sprinkle with sesame seeds and saute again briefly. Chill quickly - it tastes better. Fry bracken over low heat with sesame oil. Add Mixture C and cook until soft. Set aside. Combine bean sprouts and Mixture D. Set aside. Make a thin omelet with the beaten eggs. Cut into thin strips. Put boiled rice on plate or large bowl and place all ingredients on top. Mix and eat with Gochujan mixed with cayenne pepper. _S_O_U_P You will need: brisket soy sauce garlic sesame seeds sesame oil black pepper green onions MSG (optional) _I_n_g_r_e_d_i_e_n_t_s _f_o_r _S_o_u_p 1 lb brisket -2- BIBIM BAB (MIXED RICE WITH SOUP) _M_i_x_t_u_r_e _E: 2-1/2 tbsp soy sauce 1/2 tsp minced garlic 1/2 tbsp toasted and ground sesame seeds 1-1/2 tbsp sesame oil dash of pepper dash of MSG (optional) 2-4 green onions cut into 2-inch lengths _P_r_e_p_a_r_a_t_i_o_n _o_f _S_o_u_p Cover brisket with 12 cups water. Simmer over low heat about 2 hours, skimming off scum as it forms. When meat is tender, remove and cut into thin pieces. Add Mixture E to stock. Bring to a boil, adding more soy, salt and MSG to taste. Serve meat with soup and garnish with green onions. -3-
