Someone asked about egg, but not egg matrix, recipes. we made this
in the co-op and even the rabidly anti-veggies (the "give us big meat")
people liked it. I think it is from the Veggie Epicure.
Russian Vegetable Pie
Pastry: Filling:
1 1/4 c flour 1 small head of cabbage (~3 c?)
1 t sugar 1/2 # mushrooms
1 t salt 1 yellow onion
4 oz softened cr. 3 T. butter
cheese 4 oz. softened cr. cheese
3 T butter 4-5 hard cooked eggs
dill, basil, marjoram, tarragon, salt
pepper
Make pastry by sifting together dry ingredients, cutting in butter,
and working in cr. cheese. Roll into 2 crusts.
Saute shredded cabbage & onions with salt, pepper, tarragon,
marjoram, and basil (Overspice, some flavor disappears) til cabbage is
soft, in 2 T butter. Remove from skillet and saute mushrooms
in 1 T butter.
Spread softened cr. cheese on bottom (unbaked) crust, cover with
sliced eggs, add cabbage stuff, top with mushrooms and some dill.
Cover with top crust.
Bake at 400 degrees for 15 min, the 350 for 20-25 min.
Serves 4-6
