[net.cooks] Grilling Fish, etc...

A well-seasoned grill doesn't need oil, butter or anything else to keep the
fish from sticking. Some people insist on keeping the grill looking like the
day they got it, and that, folks, ruins the grill's "season" just as it
ruins cast-iron fry pans. To clean a grill properly and still keep it
seasoned, I recently learned this trick:

    -When the coals (or wood) are ready to cook on, put the grill in place,
     and allow it to reach cooking temp.

    -Now, while it's hot, rub the grill vigourously with a wad of tin-foil.
     It may get hot, so you can keep from burning your fingers by grasping
     it in a glove kept for the putpose, or else with a rag. Or let the
     tin-foil cool off, and do the job in bits, if the grill is extremely
     nasty.

If you need to start with a cooler grill (as in the case of fish usually),
just remove it for a few minutes, put the fish on, return the grill to the
coals, and proceed.  I do fish on the grill all the time, and never use oil,
and it doesn't stick, either. Lately my favorite is a fish called
"mahi-mahi" -- anyone know what it is? I do it either Teryaki, or with this
new Japanese sauce I've discovered -- forget the name, but my is it tasty!!

By the way -- lately I've been grilling fish using driftwood from Puget
Sound as the fuel, and the fuel seems to add this incredibly great flavor.
Can anyone confirm that salt-water driftwood imparts a very subtle, and
quite delicious flavor to fish?

Mahi-Mahi is the hawaiian term for the fish known as the dolphin (Quiet, 
Greenpeacers! let me finish!). This is NOT the mammal called the porpoise
(and also called dolphin) but is a game fish found in the warmer waters of
the Pacific such as Hawaii. It is quite a nice tender and flakey fish,
great when fresh, good when frozen, and has a rather firm flesh. If you
want an interesting and different reference to the fish look up the book
'Kon-Tiki' by Thor Heyerdahl...
