I am looking for recommendations re: Macintosh software that 
works well for creating knitting patterns and weaving drafts.  
Any information would be much appreciated.

This doesn't answer the question exactly, but...

I recently saw a demo (don't remember author's name or product) that involved
interfacing an electronic knitting machine with an Amiga.  Initially, the
whole project started by having knitting patterns designed with Deluxe Paint.
supposedly, there is a book coming out on designing knitting patterns with
Deluxe Paint (although most likely Amiga specific, it should apply to
ports of Deluxe Paint on other machines, or other paint programs).  After
getting tired of transferring the pattern manually from the screen to the
electronic knitter, the Author got a friend of hers to hack some software
and hardware to do this automatically.  It even beeps at you when it is
time to change yarn color.  The author, who knits professionally, is able
to quickly generate a new pattern and create a swatch to take to clients,
as well as expirement with the client nearby.
