[net.cooks] Tasty Shrimp Recipe

This recipe is not only delicious but low in calories.

              SHRIMP WITH WINE AND LEMON RIND

6 ounces raw shrimp (medium size)
1/2 cup cooked rice
1 tablespoon margarine 
1/2 cup parsley (fresh, but dried is okay)
1 teaspoon lemon rind, minced
1/4 cup white wine
1 teaspoon minced garlic
dash of black pepper

Melt margarine in skillet, add wine and bring to simmer.
Add shrimp, garlic and 1/4 cup parsley, lemon rind and pepper
Stir briskly for about 10 minutes. (Do not overcook).
Pour over rice.  Garnish with remainder of parsley.

It is recommended that to keep this recipe at 380 calories do not
use instant rice or butter.  But for those of you who don't count
calories, Bon apetite!
