This is a good recipe for : 1) Those who would like to eat spinach, but do not do so normally because of the peculiar odour of the leaves. 2) Those who want to fix something quick for lunch/dinner. Ingredients : 1 bunch spinach 1/4 onion 1/2 tsp cooking oil 1 green pepper 1/2 tsp black or white mustard seeds. 3 tblsp sour cream Clean and chop the spinach finely. Separately, chop the onions and the green peppers. Steam the spinach. It is better to use as little water as possible. Personally, I don't like to throw the water because it has all the minerals. Separately, saute the onions with oil, till the onions begin to turn light brown. Remove the pan from the flame. Mix the spinach, onions, green peppers and sour cream. Seasoning : In a small utensil heat 1/2 tsp oil/butter and and the mustard seeds till they begin to pop. Remove from the stove and quickly add to the above sour cream mixture. ( If one loves garlic, a clove of garlic can also be added to the oil/butter and heated. I love this. ) The dish can be eaten immediately or refrigerated. It goes very well with tortillas or rice. The ingredients are flexible depending on one's taste. Total time required : start to finish --> about 10 min.
