Does anyone have a recipe for zucchini bread? I've looked through all of my cookbooks and cou not find even one! Please mail replies. Thank you. Sonya Hansen

Here's a sure-fire zucchini bread recipe: Martha's Zucchini Bread 3 eggs 1 cup cooking oil 2 c sugar 1 tsp vanilla 2 c (peeled) grated or chopped-fine zucchini 1 tsp salt 2 tsp cinnamon 1/2 c chopped nuts 2 1/2 c flour 1 tsp baking soda 1 tsp baking powder Beat eggs until foamy. Add oil, sugar, vanilla, and zucchini. Mix well with beater. Sift dry ingredients together and add them and nuts to egg mixture. Pour batter into two greased loaf pans. Bake in a preheated 325-degree oven for 45min to an hour.

ZUCCHINI BREAD
2 cups sugar
2 cups unsifted flour
1/2 t. salt
1/2 t. baking powder
1 t. baking soda
3 t. pumpkin pie spice
Mix in large bowl, make well in center of dough. ADD...
3 eggs
1 c. vegetable oil
3 t. vanilla
2 c. grated zucchini (peeled)
1 1/2 c. nuts or raisins
Mix well. Pour into 2 greased loaf pans or 1 9x13 cake pan. Bake
at 350 for 1 hour or until done by testing with toothpick.
