{Zucchini flavored bug line} Following are a couple of zucchini recipies. Most are not my own. ------------------------------------------------------------------------------- Corn-Zucchini Bake ------------------------------------------------------------------------------- Hardware: 1 quart casserole dish. 1 oven 1 medium sized pot 1 stove 1 baking sheet (to put casserole dish on) 1 fry pan Foodware: 1 lb. zucchini (3 medium) 1/4 cup chopped onion 1 tbs. butter or margarine 1 cup (4 oz.) shredded swiss cheese 2 beaten eggs 2 cups (10 oz.) whole kernel corn 1/4 tsp salt 1/4 cup fine dry bread crumbs 2 tbs. grated parmesan cheese 1 tbs. melted butter or margarine Optional: Cherry tomatoes, and parsley for garnish. Directions: Cook and drain corn. Wash zucchini; do not peel. Cut zuc. into 1 inch thick slices. Cook, covered, in a small amount of boiling salted water till tender (15 - 20 min.). Drain and mash with fork. Cook onion in 1 tbs. butter until tender. Combine zucchini, onion, cooked corn, Swiss cheese, eggs and salt. Turn mixture into a 1 qt. casserole. Combine crumbs, Parmesan, and melted butter; sprinkle over corn mixture. Place casserole on baking sheet. Bake, uncovered, at 350 deg. f. till knife inserted off-center comes out clean (~40 min.). Let stand 5-10 min before serving. Garnish with cherry tomatoes and parsley, if desired. Makes 6 servings. ------------------------------------------------------------------------------ Stuffed Zucchini for One ------------------------------------------------------------------------------ Hardware: 1 small baking dish. 1 oven 1 medium sized pot 1 stove 1 fry pan Foodware: 1 small zucchini (8 inches) 1 tbs. chopped onion 2 oz. (1/4 cup) bulk pork sausage (or meat substitute) 1/4 cup shredded mozzarella or Monterey Jack cheese 1 tbs. chopped celery Optional: Directions: Trim ends of zucchini; cook in boiling salted water till crisp-tender (~8 min.); drain. Cut in half length-wise; scoop out centers and chop centers. Cook sausage(or substitute), onion, and celery till meat and onions are done; drain off fat. Stir in croutons, HALF the cheese, and the chopped zucchini. In a small baking dish mound mixture in zucchini shells. Bake, uncovered, at 350 deg. f. for 20 minutes. Top with remaining cheese. Bake 5 minutes more.
