Highly recommended:

Mastering the Art of French Cooking
	Volume One:  Julia Child, Louisette Bertholle, Simone Beck
	Volume Two:  Julia Child, Simone Beck
both from Alfred Knopf publisher, about 1970.  These are particularly good
because they contain not just recipes but many articles on techniques.

There has been a new edition published recently with special instructions
for food processors, as well as a trade paperback edition.

Two that I like are Sunset's "French" and "Country French" cookbooks.

Also "French Cooking For Those Who Can't" (approximately) by Julia Hayes,
probably out-of-print but very good.
