I waited awhile to see if someone else posted a bagel recipe, but no one did. This recipe is easy and versatile. I found it in the "American Heart Association Cookbook." 2 pkgs yeast 4 1/4 to 4 1/2 cups flour 1 1/2 cups warm water 3T sugar Combine the yeast and 1 3/4 cups flour, then add water and sugar. Beat at a low speed for 1/2 minutes scraping the sides of the bowl, then beat at a high speed for 3 minutes. Stir in enough remaining flour to make a moderatly stiff dough. Turn onto a lightly floured board and kneed until smooth. Cover and let rest for 15 minutes. Divide the dough into 12 portions. Shape each into smooth balls and punch a hole into each with a floured finger. Pull gemtly to enlarge hole, keeping uniform shape. Cover and let rise 20 minutes. Preheat oven to 375 Add 1t sugar to 1 gallon boiling water. Reduce to a simmer. Cook bagels in the simmering water for 7 minutes, turning once. Drain on a paper towel. Sprinkle bagels with toppings, if desired. Place on ungreased cookie sheets. Bake for 30 to 35 minutes. Variations sprinkle with chopped onions, kosher salt, poppy seeds, sesame seeds, or caraway seeds. Use 1/2 whole wheat flour and 1/2 all purpose flour. Mix in cinnamon and raisins.
