You can make your own vinegar at home, far superior to any you can buy, from
leftover wine.  You can have three different vinegar barrels going, one for
white wine vinegar (add only white wine), one for red wine vinegar (add any
wine) and one for Sherry wine vinegar.  These come with a terrific booklet of

The last known price was about $60 per barrel (a horiz. barrel somewhat less
than a foot long and a half a foot high (in stand)), full of aged wine vinegar,
and containing active vinegar mother for eternal production.  You can bottle
your own vinegar, and add different (fresh) spices to different bottles.
