  We were having dinner at a friends house during the holidays, and
  my friend served 'Irish Potatoes' (I think they're dubbed as Irish 
  because they come out looking a little green from all the spices)
  with her holiday turkey and ham.

  I had never heard of these before and they were quite YUMMY.  She
  was able to come up with the following recipe for me.  Its another
  one of those recipes put together by someone who doesn't cook with
  a measuring cup, so I daresay these measurements are approximate.

	       Irish Potatoes

         8  med potatoes quartered, boiled and drained.
	 1/2 cup finely chopped celery
	 1/2 cup finely chopped onion
	 1/2 stick butter
	 1/2 cup sour cream
	 1 tablespoon sugar
	 1 1/2 teaspoon thyme
	 3/4 teaspoon basil
	 salt and pepper to taste

     mash above together, place in a casserole and bake @
     350 for 1 hour.
