Someone said there weren't enough recipes in net.cooks, so, to remedy that situation, here's a soup I put together a few nights ago - to the acclaim of some appreciative and hungry friends: CREAM OF SPINACH 1 bunch spinach 3 cups chicken stock 1/4 cup chopped onion 1/2 cup cream 1/4 cup chopped celery incl. leaves 1/4 cup medium sherry 1 TB butter 1/4 TSP nutmeg 2 TB flour salt, white pepper to taste Wash spinach and discard any thick stalks. Melt butter over medium heat. Add onion and celery and cook until onion is translucent (about 3 mins). Stir in flour, add salt and pepper and cook for 2 minutes. Add chicken stock, stirring well and heat until it starts to boil, stirring it frequently. Add spinach and simmer for 15 minutes. Remove from heat and allow to cool for 15 minutes. Using a food-processor with steel blade or, in the absence of such an indispensable device (:-)), a blender, process/blend the mixture in batches until smooth with dark-green flecks. Return to a medium heat, taste and correct seasoning. Stir in cream, sherry and nutmeg. Do not allow to boil. Serve (4-6I) and enjoy! -- Rod Williams dual!ptsfa!ptsfc!rjw
