California Guacamole ingredients: 2 medium avacados (Hass preferred) 1 bunch green onions 1 small tomato 1 California or Anahiem chili 3 Jalpeno chilis 2 tbs sour cream spices (see below) Be aware of the difference between Guacamole and Avacado Dip. Without the chilis what you have is Avacado dip (sort of). Mash the avacados until they are smooth with very few pieces. Chop the California chili medium to fine (they are the large mild kind) and the Jalipeno very fine (with seeds removed). The tomato should be choped medium and the green onion sliced into very thin rings. Mix all ingredients and add the spices. Personally I add cumin, chili powder, salt and garlic in that order, but that is a matter of personal taste. Lemon juice can be added to keep the guacamole from turning brown (it never lasts long enough at MY place to turn brown) but be carefull as it changes the flavor (not always for the better). -Pete- "Live for today, for tomorrow we diet!"
