I watched a waiter make this after-dinner concoction at 
Xavier's, an excellent Mexican (not Tex-Mex) restaurant in Dallas.

Take a stemmed water glass.
Rub the rim with orange peel.
Stick the rim in some white sugar.
Put a shot of white rum in the glass and ignite!
Twist the glass until the sugar has melted around the rim.
Extinguish the blaze.
Dump out the remaining rum.
Put two dashes of cinnamon powder in the glass.
Add one shot each of brandy, amaretto and Kahlua.
Fill glass with coffee up to a half inch to the rim.
Pouring it into a spoon, float some cream on top.
Add a straw and garnish with a cherry.
