I am new to the net.  I have seen a couple of Indian recipes
recently and thought if I posted one it might stimulate others.
 
 First, keep some of this around.  I use it in a lot of things
 Indian and a lot of things that aren't.  Mine is ever changing 'cause
 when I get close to out I make some more but I don't think I've
 made it the same way twice yet.  

    GARAM MASALA

    1/4 CUP CARDAMOM SEED
    1/2 CUP GROUND CORIANDER
    1/4 CUP CLOVES
     2  TBS CUMMIN
     2  TBS MACE
     1  LARGE PINCH OF NUTMEG

       Combine all the ingredients in a shallow
       pyrex baking dish.  Roast in the oven at
       350 for 20-30 min.  After it's cool, grind
       it up (I use a coffee grinder but a blender
       should work) and keep it in a TIGHTLY sealed
       jar.

 I made this about a week ago because it was so nice here I wanted
 to get the BBQ out.  It's not bad if made in the oven but the smoke
 of the BBQ makes it just that much better.

    SEEKH KEBAB

    1 LB GROUND LAMB
    2 MEDIUM ONIONS CHOPPED
    3 TBS BREAD CRUMBS
    1 1/2 CUPS CHOPPED FRESH CORIANDER
    1/2 TSP SALT
    1 TSP GARAM MASALA
    1 TBS FINELY CHOPPED GREEN PEPPER
    1 TBS LEMON JUICE

    I grow my own coriander and use fresh if I can and dry some to get
    me through the winter.  I always run out though.

    Mix everything up real good and form it into balls about 2 inches
    in diameter.  Push them onto skewers and as you do, mold them into
    hot dog shapes about an inch in diameter.  Cook them slowly over 
    the coals of the BBQ or in the oven at 350 for 15 - 20 min.  When 
    they come off the skewer easily they're done.
