In response to the article requesting a vegetarian quiche recipe, I thought I'd post one that will satisfy nearly anyone (I hope), except real men of course :-). Have ready 1 9 inch pie or quiche pan lined with a rich pie dough. If you make your own, you can snap it up with celery salt, lemon peel, or just about any savory seasoning that will compliment the quiche filling. Custard: 2 C scalded milk or cream (the scalding is not necessary, but it will hasten the cooking time) 3 beaten eggs salt and pepper to taste a dash of nutmeg 1 t FRESH herbs such as chives, rosemary, or anything else you like. Use less if you are using dry herbs. Cool the milk a little, then beat in the rest of the ingredients. Filling: 1 C any combination of fried bacon, ham cubes, sauted onions, green peppers, spinach (cooked), zuchini (cooked), or just about any other cooked vegetable. 1/2 C shredded cheese. I think swiss is the best for quiches, but anything you like is ok if it's not too strong. Assembly: place mixed veggies, meats, etc. on bottom of pie pan. Sprinkle with shredded cheese. Pour custard over all. Bake in a pre-heated 375 degree oven for 35 minutes, or until a knife inserted half way between center and edge comes out clean.
