Johnny cake, from what I've read in a number of cookbooks, derives from the name 'Journey cake' and was originally little more than cornbread intended for the traveler to take and eat along his/her way. Since recipes for cornbread have many variations around a fairly common central theme, I would guess that it's dang nigh impossible to figger out which one your grandfather was making, although it probably could be approximated by making cornbread and just adding a few ingredients for each experimental batch. I've heard of folks putting bacon bits and creamed corn in their cornbread, for example.
