[net.cooks] Calzones, anyone?

kincaid@ur-valhalla.UUCP (Glenn Kincaid) (02/22/85)

Does anyone out there in netland have a recipie for making calzones?
I hanen't been able to find one, and I've been looking for awhile.
More specifically, I could really use a recipie for the dough.

				Thanks,

This is how my grandmother made calzones. However, she never used
recipes for anything, so it's sort of rough.

The dough is a basic pizza dough. Cut it into small pieces
that can be rolled out into 6 inch circles (about 1/2 in thick).

In the center of the dough put a dollup of ricotta that has
been mixed with egg, salt, pepper, grated parmesan, and
cubed mozzarella. On top of that put a slice or two of
prosciutto (ham if you're on a budget).

Fold over the dough and pinch the edge closed tightly. Brush
with beaten egg. Then bake on a greased cookie sheet until
nicely browned (about 20-30 min at 450).

Try any reasonable pizza dough. A couple of recipes came by on this
newsgroup a while back.
