Well, after months of reading other peoples' recipes on the net, I finally decided to contribute. Chili Tamali Pie is probably not the best thing my wife Chris and I make, but it is one of the better tasting for how simple it is. >-<->-<->-<->-<->-<->-<->-<->-<-<->-<->-<->-<->-<->-<->-<->-<->-<->-<->-<->-< Chili Tamale Pie Ingredients: 3/4 lb. ground beef 1 cup enriched yellow corn meal 1 medium onion,chopped 1 cup grated cheddar cheese 1 garlic clove,crushed 2 1/2 tsp. salt 1 can (16oz.) whole tomatoes 1/4 tsp. pepper 1 cup whole kernal corn 1 Tbs. chili powder (or more) 1 3/4 cup milk 2 eggs, beaten Optional: Chris usually adds extra chili powder, as noted, and also some cumin, and about 1/8 cup of chopped chilis - otherwise the dish is a little too mild for us. Instructions: 1. Preheat oven to 350 degrees F. 2. In a large skillet, cook beef, onion, and garlic, until beef is browned. Spoon off fat. 3. Add tomatoes (with liquid), corn, 1/2 cup milk, 1/2 cup corn meal, 1/2 cup cheese, 1 1/2 tsp. salt, pepper, and chili powder. Optional (hot) items should also be added now. 4. Cover and cook over low heat for about 10 min. 5. Pour into a 9 inch deep dish pie plate, or an appropriate size casserole dish. 6. In a medium saucepan, combine remaining 1 1/4 cup milk, 1/2 cup corn meal, and 1 tsp. salt. 7. Stir over low heat until thickened. 8. Add remaining 1/2 cup of cheese and stir until smooth. 9. Remove from heat; stir in eggs. 10. Pour over beef mixture. 11. Bake 30-35 mins. until golden brown.
