Can anyone give me a good definition of what New York Cheesecake is exactly (as opposed to any other kind of cheescake.) I have heard varying opinions.

My understanding, not being particularly a cheesecake nut, is that there are two general styles: fluffy and creamy. I've had cakes that fit both of these descriptions, and they're quite different.
