Here's a recipe for Missisippi Mud Cake, which was kind of traditional at the clan gatherings, along with Watergate Pudding, which is in the next posting. I don't know if the recipe originated in a cookbook, but if it did could someone let me know which cookbook it was? If the other recipes are this good it must be really something. Missisippi Mud Cake 1 c Margarine 1 1/2 c Flour 1/2 c Cocoa 1/8 tsp salt 2 c Sugar 1 1/2 c Chopped Peanuts 4 eggs, slightly beaten 2 c Miniature Marshmallows 1 tsp Vanilla Preheat oven to 350 F. Melt the butter in a saucepan. Add the cocoa, and stir until blended. Remove the suacepan from the heat, add the sugar, eggs, vanilla, and mix them all together. Combine the flour, salt, and the nuts in a bowl, and stir so that the nuts are coated with the flour. Add this gradually to the saucepan. Spoon this into a greased 13*9*2 pan and bake for 35-40 min. Spread the marshmallows on the warm cake. When the cake cools, you will notice the reasoning behind it's name. It may not look like much, but it sure tastes great.
