Well, I have received many replies upbraiding me for equating carotene with keratin, so I figured I'd stem the tide of followups saying "You're wrong, Phil" by posting a correction. Keratin is the protein that fingernails and toenails (and maybe hair, too?) is made out of. If you want keratin in your cheese, that's your business, but don't put it in there because I mistakenly said that it'll make your cheese yellow. Also I've been informed that annato seeds are also used to color cheese yellow. I'd never seen it used before, but apparently it's true. Sorry if I've caused anyone to chew their digital keratin.
