Here's a dessert recipe that I find easy to make and yummy, too: Lemon Curd (sounds terrible, does it not?) 1 medium size lemon 4 eggs 1/2 cup butter or margarine at room temperature 1 cup sugar Preheat the oven to 300 and put a kettle of water on to boil. Blend the eggs, sugar and butter in a blender until smooth. Cut the ends off the lemon and discard. Peel the thin yellow layer of the lemon skin (this is called the zest, I believe) chop and blend at high speed with the other ingredients. Peel the remaining white skin from the lemon and discard. Slice the lemon and discard the seeds. Blend the lemon with the other ingredients. [NOTE: you can just slice the lemon and remove the seeds before tossing it in the blender, but I think discarding the white pith makes for a more flavorful dish.] Pour the mixture into custard bowls and place in a shallow pan. Pour boiling water around the bowls to a depth of about one inch. Place in the oven and bake for about half an hour. Serve hot or chill. Bob Warren cbosgd!rew
