I invented this simple recipe on the fly a few days ago. It came out pretty well, and was simple to make. Pork Chops with Oregano and Garlic Ingredients: pork chops (I used 6) about 1 1/2 Tbsp. dried leaf oregano 2 garlic cloves, minced olive oil dry white wine salt pepper Heat oregano in a heavy skillet until it starts to become fragrant. Add olive oil to coat bottom of pan well, then add garlic and saute until golden. Add pork chops and brown on both sides. During this process, the oregano may turn dark, but don't worry about it. When chops are browned, season with salt and pepper, add enough wine to almost cover chops, cover, and simmer. When chops are tender, remove them. Strain sauce to remove garlic and oregano. Wipe pan clean and return strained sauce to pan. Remove any bits of garlic or oregano that may be clinging to chops. Return chops to pan, piling them up on one side (this is to allow the sauce to boil down). Turn up the heat to high, and boil sauce until it becomes thick.
