We are looking for ways to reduce the use of meat in our diet and need pointers to good books or recipes that anyone might want to share. Also, how is tofu used? (saw it in store other day and not familiar with its qualities).

REFERENCES: <121@tekcrl.UUCP> For a non-meat cookbook I would recommend Nikki and David Goldbeck's American Wholefoods Cookbook. They emphazise "good" food - whole grains, low fast, high fiber, high nutrient value. The recipes I've tried are pretty good. Each recipes tells you whether it provides major or minor protein, and what you might want to serve it with to make it complete protein. Tofu is one of those foods that taste like nothing at all. I don't mean it doesn't taste like anything else. It just tastes like nothing. It absorbs the flavors of what you cook with it. The best way to serve tofu(in my humble opinion) is to stir-fry it. First you fry the tofu by itself. It gets kind of crunchy on the outside. Then you throw it into any stir fry recipes instead of the meat. It won't taste like meat, but it will absorb the soy sauce, hot pepper sauce and garlic and taste pretty good. Some people like it steamed with a sauce on top, but I don't. The tofu doesn't absorb enough of the sauce when you just pour it on top and it tastes very bland. It really needs a chance to soak up the sauce. Chinese cookbooks often contain good recipes for tofu. Chef Chu's Chinese Cookbook contains a number of recipes for tofu that look great(nice and spicy). Sharon Badian ihnp4!mtgzz!seb
