My favorite way to use egg yolks:

              Coconut Pudding

2 c milk
2 egg yolks
1/2 c. sugar
2 T. cornstarch
1 tsp. salt
1 tsp. vanilla
2 Tbs. butter
coconut--however much you like (I like lots)

Scald together milk and egg yolks.  Mix sugar, cornstarch, salt.  
Add to egg mixture and boil, stirring constantly until it thickens.  
Add vanilla and butter after removing from heat.   After it
cools, chill in fridge.

Either fold in the coconut after it cools, or sprinkle over it
when you serve it.

My mom usually takes the 2 egg whites, beats them until stiff, and 
folds them into the pudding after it cools.  But of course you aren't 
using up just yolks then.  Makes it light and tasty, though.

If you prefer chocolate pudding, increase the sugar to 1 cup, and
include 2 heaping Tbs. cocoa with the sugar.
