[net.cooks] recipe wanted

barbaral (02/02/83)

A friend of mine had an artichoke cheese quiche at a restuarant.
Does anyone have such a recipe?

I am looking for a recipe for a breakfast casserole. It is sort of
like an egg puff. It has eggs, bacon, sausage, cheese and green
onions in it. It is cooked in a casserole or souffle dish.
I bought a champagne brunch for 4 at an auction, and this dish was
served. The person who cooked the brunch has moved out of the area.

Could someone please submit a recipe for mushrooms stuffed with
crabmeat?

Does anyone know a good recipe for N.Y. cream cheese cake or just N.Y. cheese
cake? Please post or send mail. Thanks in advance.

	Help...

	{an unusual but hopefully not impossible request}

I had a main dish (several years ago) which seemed

to be a rice pilaf with strips of white chicken and

peas (plus spices). I enjoyed this dish in San Francisco

but have not been able to sample "it" on the East

Coast. If anybody has any idea how to make this dish

or recipes similar to them ... please post them.

I'm looking for a cake recipe. I know it by the name "Friendship Cake"
my mother-in-law says it's called a "Herman Cake" (don't know if the
spelling is right). It uses a starter or base which you "feed"
with 1 cup flour, 1cup sugar and 1cup milk on every fourth day.(you don't
refrigerate it and it has to be stirred every day). On the tenth day you
feed it again and take 3 cups of the starter out and use the remainging
batter to make your cake. You divide the 3 cups of starter into 3
portions and give to 3 friends to start their own.

I actually have the CAKE recipe -- what I need is the STARTER or BASE recipe!
If anyone can help please send mail to homxb!romb or mvuxe!rob. Thanks
in advance, Ro Barbuto.

This is the "Friendship Cake" I know, which is probably what you want, though
a bit different, but better, I think.

SourDough Starter:

Allow 4 days. Dissolve 1 tablespoon (1 envelope) dry yeast in 1 cup
lukewarm water (115F). Add 1 cup whole wheat *bread* flour and stir.
Let stand at room temperature in a large crock or nonmetal bowl (i just
use an old pickle jar, myself), covered with cheesecloth, for 24 hours.
Stir down with two forks and let stand for another 24 hours. combine
the above mixture with another cup of the flour, 1 cup room-temperature
milk and 1/2 cup light honey. cover with cheesecloth and let stand at
room temperature for 48 hours. You will begin to see bubbles and the
sourdough odor. (If the starter is not yet active, add 1/2 cup flour,
1/2 cup milk and 1/4 cup honey. Let mixture stand at room temperature
for another 12 to 24 hours.)

Cake Base:

Allow 10 days for the starter to produce enough for friends.
DAY 1: In a large nonmetal bowl, combine 1 cup starter, 1 cup
whole wheat *bread* flour, 1 cup room-temperature milk and 1/2 cup
light honey. Mix well. Cover with plastic wrap and let stand at
room temperature.

EACH DAY: Stir well.

DAY 5: Add another cup of flour, another cup of mil and 1/4 cup honey.
Mix well.

DAY 10: Repeat procedure of day 5. Today you're ready to give each of
three friends a cup of this CAKE BASE.

SourDough Coffee Cake (yummers!)

1 cup Cake Base
2/3 cup light vegetable oil
3/4 cup light honey
3 eggs
1 tablespoon vanilla extract
2 cups + 1 tablespoon whole wheat *pastry* flour
2 teaspoons cinnamon
1 teaspoon baking powder
3/4 teaspoon baking soda
1 cup chopped pecans or walnuts
1 cup diced (1/2-inch cubes), peeled apple (use firm, tart apples -
    eg.,Granny Smith)
1 cup raisins

Grease a 10 inch bundt pan and dust with flour. In a mixer combine
Cake Base, oil, honey, eggs and vanilla. Beat a medium speed 2 minutes
Preheat oven to 350F. Sift together 2 cups flour with cinnimon, baking
powder and soda. Add to dough in 3 portions, mixing only until blended.
Toss in nuts, apples and raisins with 1 tblspn of flour and fold them
gently into batter. Spoon batter into pan and bake for 40 to 50 minutes
until cake is nicely browned. Cool and enjoy.

To save the extra cake base for more baking:

Keep extra in container that gives it at least 3 inches of head-room for
gasses. Every week or two, let the Cake base sit at room temperature
for 24 hours. Then stir in a cup of flour, a cup of milk and 1/4 cup
of honey. Let the mixture set at room temperature for another 24 hours
