[net.cooks] Marinated Summer Salad

In keeping with good recipes for summer, here's an all purpose one you
can experiment with:

Marinade:

1/4 C good olive oil
juice of 1/2 lemon
1 T chopped fresh mint
1 T chopped fresh parsley
salt and fresh ground black pepper to taste
1 mashed garlic clove

Combine above ingredients and set aside.

Now chop your favorite fresh veggies.  The following mix turns out well:

1 large cucumber peeled and diced.  (if not waxed, you might want to leave
the peel on, or only partially removed).
1 large tomato diced.
2 or 3 green onions, sliced (or diced bermuda onion to taste)
1/2 green pepper diced

To make more salad, just increase the amount of marinade.  You can add
any other veggies that don't wilt easily.

Mix marinade with veggies and refrigerate for at least 2 hours.  When ready
to serve, you can also add bite sized pieces of salad greens if you want.

This makes an excellent salad to serve with falafel on pita bread, or
souvlaki meat, etc.
