[net.cooks] Recipe sought - fruits in brandy

broder@magic.ARPA (06/13/85)

Many gourmet shops sell imported fruits preserved in brandy in fancy
bottles and at *very* fancy prices. Does anyone have a good recipe
for such contraptions? I am also looking for a good book about home
made liquers, fruits in brandy, and similar heady topics.

Many thanks,
Andrei

Lenotre's Ice Creams and Candies (pub. Barrons, ISBN 0-8120-5334-6)
has recipes for brandied fruits, with very careful explanations.

Believe it or not, the Ball canning book has a good recipe for brandied
pears. I can't see why the same technique won't work for other fruits.
I'd post the recipe, but my books at home. If anyone is interested, I'll
dig it up and post later.
