Many gourmet shops sell imported fruits preserved in brandy in fancy bottles and at *very* fancy prices. Does anyone have a good recipe for such contraptions? I am also looking for a good book about home made liquers, fruits in brandy, and similar heady topics. Many thanks, Andrei

Lenotre's Ice Creams and Candies (pub. Barrons, ISBN 0-8120-5334-6) has recipes for brandied fruits, with very careful explanations. Martin Minow decvax!minow

Believe it or not, the Ball canning book has a good recipe for brandied pears. I can't see why the same technique won't work for other fruits. I'd post the recipe, but my books at home. If anyone is interested, I'll dig it up and post later. Betsy Cvetic ihnp4!drutx!eac
