Clams for chowder need not be the best your local seafood market carries. I do reccommend staying away from the canned variety though. If you can, find a store that carries fresh sea clams. They are very large so request shucked and possibly chopped. I cannot reccommend a recipe, I've only had to pickup the clams and drink beer whilst they were being prepared. As for other ways of eating the little guys try - Fried - Raw(mucho cocktail sauce helps) - Baked - In dips(good way to get rid of any leftovers) - And oh yes steamed, especially if you can get fresh little ipswich clams dug somewhere like monomoy island, chatham, cape cod. In response to Linda Carson, you clean clams by soaking them in cold water sprinkled with a handful of cornmeal for about an hour, drain them and rinse with cold water. I love clams best simply steamed over high heat in a water/wine liquid for about five or six minutes then dipped into the steaming liquid and melted butter However, also good are clams sauteed with mushrooms and shallots finished withwith wine and tossed gently in the pan with fresh cooked rice and chopped parsley. This works equally well with fresh mussels if you can get them. Does anyone have a good recipe for chili made with roast beef instead of hamburger. I used to be able to get it when I lived in Oregon and want to make some at home. Thanks in advance! Anne M.
