Caesar Salad 2 oz minced anchioves 5 gloves garlic, minced 2 tbl red wine vinegar 1 1/2 cups olive oil Put the anchovies, garlic and vinegar in a blender and mix thoroughly, as you slowly add the olive oil. Romaine lettuce Croutons Grated Romano cheese Egg Yolk Black pepper In a bowl mix one egg yolk, 2 oz vinaigrette, croutons 1tsp pepper and lettuce. Toss well. Sprinkle with cheese.

Rub vigorously, and the piece of garlic should disintegrate and become a film on the inside of the bowl. The bowl should be made of wood. -- Morris M.
